Roasted Chickpea Quinoa Bowl with Spicy Peanut Sauce

This Roasted Chickpea Quinoa Bowl is the perfect quick meal to throw together on busy nights. Packed with veggies and topped with an amazing spicy peanut sauce, this meal is definitely one you’ll want to keep in regular rotation.
I’ve been trying to make healthier choices. The problem is, the healthiest choices require A LOT of prep work. As a mom of 6, time is not something I have a lot of. Most nights I’m scrambling to just get anything on the table and I’m beyond caring how healthy it is.
That’s why I love making quinoa bowls. Most of the prep work can be done ahead of time and you can have everyone customize their bowl so they get exactly what they want.
We used to use rice for these but a few years ago we made the switch to quinoa. It adds a great nutty flavor and the nutrition benefits are amazing. Quinoa is gluten free, 100 percent whole grain, a good source of fiber and a complete protein, containing all nine essential amino acids. It’s even fluffier than rice so it’s perfect in these.
The only downside to making quinoa is it can be a bit of a messy process. I always rinse my quinoa before cooking it then strain out any excess liquid (if there is any) but those tiny little grains get everywhere in the process.

Ingredients
- 1 bag Success® Tri-Color 100% Quinoa
- 1 can of chickpeas
- 1 cup steamed broccoli
- 1 red pepper, diced
- 1 cup shredded carrots
- 1 cup diced cucumbers
- 3Â Tbsp. soy sauce
- 3Â Tbsp. rice vinegar
- 2 Tbsp. vegetable oil
- 1/2 tsp red pepper flakes
- 2 Tbsp. sugar
- 1/3 cup peanut butter
Instructions
Rinse your chickpeas, dry with a paper towel then toss with olive oil, salt, pepper, and garlic powder. Roast at 450° for about 30 minutes (or until crispy). I usually make these ahead of time and have them ready to go in my fridge.
To make your quinoa, just toss a bag of Success® Tri-Color 100% Quinoa into a pot of boiling water for ten minutes. So easy.
While it cooks, chop your veggies (if you didn’t do that earlier in the day) and make the sauce.
To make the sauce, add the soy sauce, rice vinegar, vegetable oil, red pepper flakes, sugar, and peanut butter to your blender. Blend until smooth.
Pull the quinoa bag from the pot, and fill your bowl. Top with roasted chickpeas, steamed broccoli, diced pepper, shredded carrots, diced cucumbers (or any toppings you’d like) and drizzle the spicy peanut sauce on top.
The best thing about this is you can really throw anything you have in your fridge on top, so your picky eaters can have dinner exactly the way they want it. No stress and easy cleanup!
