Berry Citrus Salad with Honey Lime Vinaigrette

One of the things I love the most about where I live is that there I can always get plenty of California grown produce. There are very few things I love more than hitting up the farmers’ market on a Saturday morning and coming home to build an awesome salad with all the fresh produce.
My kids are on a first name basis with the honey guy. I think they go to the farmers’ market just for the honey sticks.
California grows nearly half the fruits, nuts, and vegetables grown in the U.S. and we are so lucky to have so many of those farmers close to home. It’s always fun to talk directly with the farmer who grows your food and see how passionate they are about the quality of their produce.
With the drought here in California, water use has been a hot topic, especially among the farmers I have talked to. They need water to continue providing fresh food and California farmers and ranchers are always looking for innovative ways to use water responsibly.

Strawberries are in season right now in California so on my last trip to the farmers market we stocked up on strawberries and all kinds of other produce to make our favorite spring salad. This Berry Citrus salad is loaded with all my favorites — avocado, oranges, strawberries, almonds — and it is topped with an amazing honey lime vinaigrette.

Ingredients
- Butter leaf lettuce
- 1/2 red onion, sliced thin
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1 avocado, diced
- 1 mandarin orange, sectioned
- 1/4 cup almonds
- 1/4 cup feta cheese
For the dressing:
- 1/2 cup olive oil
- 1/2 cup apple cider vinegar
- 1/4 cup honey
- 1 t salt
- Juice of 4 limes
Preparation
Combine the olive oil, apple cider vinegar, honey, salt, and lime juice to make your dressing. This can be made the day before if needed. This dressing does need to be stirred well each time you use it. The honey is so heavy that it tends to sink to the bottom.
In a large salad bowl, top your butter leaf lettuce with the red onion, strawberries, blueberries, avocado, almonds, oranges, and feta cheese.
Top with the honey lime vinaigrette and serve right away.
