Spinach Lasagne Rolls

We host a lot of dinners with family and friends throughout the holiday season. These Spinach Lasagne Rolls have kind of a rustic casual feel that makes them perfect for entertaining. With simple flavors like ricotta cheese, fresh spinach, and tomato sauce, these are always a hit.

Food is pretty much the center of everything we do through the holiday season. Very few things bring people together like a great meal. We are always looking for great meal ideas to serve when entertaining (or to take to a holiday potluck) and this recipe for Spinach Lasagne Rolls is always a hit.
These are so easy to make. They add a fun twist on a classic lasagna and they are so much easier to portion out when entertaining. My kids actually really like making these so meal prep ends up being a family activity.

These are filled with amazing flavors thanks to a little help from Barilla and Galbani. We used Barilla marinara sauce and lasagna noodles for the base of this dish and loaded it up with Galbani ricotta cheese and shredded mozzarella.
We stock up on all our favorites at Walmart so I usually have everything on-hand that I need to make these. That comes in handy when we find ourselves with a last-minute dinner guest, which happens quite a bit during the holiday season.

Spinach Lasagne Roll Ingredients
- 1 box Barilla curly lasagne noodles
- 2 cups Galbani ricotta cheese
- 1 cup Galbani mozzarella cheese, shredded
- 1/2 cup parmesan cheese
- 1 jar Barilla marinara sauce
- 1 cup fresh spinach, washed
- 1 Tbsp. Italian seasoning
- 1 egg
- Fresh oregano
Spinach Lasagne Roll Instructions

Cook your Barilla lasagne according to the instructions on the package.
In the meantime, combine the ricotta cheese, egg, parmesan cheese, and Italian seasoning. The Galbani ricotta cheese has such a smooth and creamy texture. It really takes this dish to another level.
Add salt and pepper to taste and mix well.
When your pasta is cooked, strain the pasta and toss with a bit of olive oil to prevent sticking.
Lay one piece of lasagne out on your cutting board, spread with your ricotta mixture, top with Galbani mozzarella cheese, and layer spinach leaves on top in a thin layer.
Starting at the end closest to you, roll the piece of lasagne until you have a tight roll.
In a baking dish, pour in a thin layer of Barilla marinara sauce. Gently shake the baking dish to coat evenly.
Place each lasagne roll on top of the sauce until you have filled the baking dish. Top with remaining sauce, mozzarella cheese, and fresh herbs (these can be added before or after baking.
Bake at 350° for 30-35 minutes, or until cheese has melted and pasta is warmed all the way through..
Serve with a nice side-salad and garlic bread.
