Strawberry Spinach Salad

I can’t get enough of fruit-filled salads during the summer. There’s something about throwing fresh strawberries into a salad that just makes it feel like a special treat! This spinach salad combines some of my favorite flavors and it’s perfect as a light lunch or as a fantastic side dish at a summer barbecue.
Every time I make this someone ask me for the recipe.
My non-salad loving husband even craves this one! You really can’t go wrong with this.
Ingredients
- Baby spinach, washed and dried
- Sliced strawberries
- 1/2 cup pecans
- 1/4 cup crumbed feta cheese
- 1/4 red onion, sliced
- 1/2 cup olive oil
- 1/2 cup cider vinegar
- 1/4 cup sugar
- 1 t salt
- 1 T poppy seeds
Preparation
Combine your spinach, sliced strawberries, and pecans in a large salad bowl. In a separate bowl, combine the oil, vinegar, sugar, salt, poppy seeds, and red onion to make the dressing. This dressing gets better the longer it sits so if you can, make it ahead of time. It’s still great right after you make it but once those onions marinate for a while it just adds a whole new level of flavor.
Toss the salad with the salad dressing. Add a little bit at a time and adjust it based on your own taste. You probably won’t need the whole batch of salad dressing but it keeps in the fridge for several weeks.
Add crumbled feta cheese to the top and serve.
