Tomato, Onion, and Cucumber Salad with Feta
I love fresh and light side dishes for summer. This tomato, onion, and cucumber salad with feta is perfect alongside a summer barbecue. I’ve even eaten this as a light lunch on those days when you just need something simple. It’s delicious, easy to make, and everyone always loves it.
This salad gets better the longer it sits so it can be made ahead of time to save on prep work. If you are going to be serving it later, I’d just leave the feta cheese out until you are ready to serve then use it to top the salad so it doesn’t get soggy.
Ingredients
- 1 cup diced cucumbers
- 1 cup diced tomatoes
- 1/4 thinly sliced red onion
- 2 Tbsp. Olive oil
- 2 Tbsp. apple cider vinegar
- 1/4 cup crumbled feta cheese
- salt and pepper, to taste
Preparation
Dice and slice your veggies. Combine the cucumbers, tomatoes, and red onion, with olive oil and vinegar. Season with salt and pepper. I love this recipe with lots, and lots of pepper but adjust the seasonings to fit your family’s taste. Toss with crumbled feta cheese and serve.
This is delicious served with a crusty piece of bread or as a light side dish to go along with your favorite BBQ foods.
