These cookies were kind of an experiment because I ran out of my usual secret ingredient for cookies — vanilla pudding mix.
I had already started making them and when I looked in the pantry I only had devil’s food pudding. I decided just to go with it and see how it turned out.
The results are decadent chocolatey cookie with a creamy peanut butter center. Normally monster cookies have peanut butter mixed into the batter but I wanted to mix it up and have a gooey surprise in the middle.

Ingredients
- 1/2 C peanut butter
- 1/2 C powdered sugar
- 1 C salted butter
- 3/4 C light brown sugar
- 1/4 C white sugar
- 1 small package Jell-O instant devils food pudding mix
- 1/2 t vanilla
- 2 eggs
- 1 t baking soda
- 1 1/4 C flour
- 2 C old-fashioned oatmeal
- 1 C mini m&m’s
Preparation
Preheat oven to 350 degrees.
In a small bowl mix together peanut butter and confectioner sugar. Then, use a teaspoon to scoop peanut butter mixture onto a parchment paper lined cookie sheet. Let chill in the freezer for about fifteen minutes.
Using a mixer, cream together butter and sugars. Add Jell-O and mix until combined. While that is mixing, add in the eggs.
Pour in dry ingredients and blend until no streaks of flour remain. Add oatmeal and mini m&m’s. I usually do this part by hand.
Now its time to stuff your cookies! Use a tablespoon to scoop dough onto cookie sheet and flatten the dough out. place peanut butter balls in the center, then cover up with another tablespoon of dough. Make sure all your edges are sealed. These cookies tend to spread, so give each on some space around it. Bake in the over for about 12 minutes. Enjoy!
