The Ultimate White Chicken Chili

There’s something seriously comforting about White chicken Chili when the weather cools down. My family enjoys this homemade chili at least several times a month and it never gets old. We kept things simple for this White Chicken Chili by using S&W Beans. We can throw this together in a matter of minutes and cook it so fast in the Instant Pot. This is the perfect meal for a busy week night!

White Chicken Chili Ingredients
- 1 onion, diced
- 2-3 chicken breasts
- 4 cups chicken broth
- 1 can diced green chilis
- 2 cans S&W White Chili Beans
- 1 C sour cream
- 1 C milk
- 1 t garlic powder
- 1 t cumin
- 1/2 t cayenne pepper
- salt and pepper to taste
- Shredded cheese
White Chicken Chili Instructions
This can be made in the slow cooker but, since I’m always short on time, I usually reach for my Instant Pot first. This White Chicken Chili is so quick and easy to make in the Instant Pot.
Set your Instant Pot on simmer and add in the diced onion. Sauté for 3-4 minutes until transparent.
Add in your chicken breasts, chicken broth, green chilis, 2 cans of S&W White Chili Beans, and seasonings. I love the flavor in this variety.
Set your Instant Pot for 17 minutes on manual.
After cooking, do a quick pressure release.
Remove your chicken breasts from your Instant Pot. Shred them and return them to the pot.
Stir in the milk and sour cream. Keep warm
Serve topped with cheese and tortilla chips.

I made this tonight and it was soooo yummy! I didn’t have chicken breasts so I used chicken tenderloins and set the Instant Pot to 16 mins. Worked out great. Thanks for the super easy recipe!
