Banana-Berry Overnight Oats Recipe
Skipping breakfast is not an option for me . . . at least if I want to be in any condition to be around other humans. The problem is I like to hit the ground running in the morning so taking the time to stop and actually cook breakfast drives me nuts.
Overnight oats are the perfect option for me because I don’t have to do anything except grab a spoon and pull it out of the fridge. It’s nice and filling too without feeling heavy so I love starting my day off with this easy breakfast recipe.
I’d heard the concept of overnight oats talked about for a while but hadn’t gotten around to try them. Instead of cooking your oatmeal you soak it overnight. The result is wonderfully creamy oats that you can add endless flavor combinations to.
Ingredients
- 3/4 cup oats
- 1 cup milk
- 1 T chia seeds
- 1/2 cup mixed berries
- 1/2 a banana, sliced
- 1/4 cup pecans
- 1 T brown sugar or maple syrup
Preparation
In a glass container, combine your oats, milk, chia seeds, banana slices, mixed berries (I love strawberries and blueberries but use whatever is in season) and brown sugar. Cover and store in the fridge overnight.
The next morning, top with extra berries and pecans and enjoy. That’s it! I promised it was easy.
You can experiment with different mix-ins and toppings to add some variety. I love that I can change this up so that I never get bored with my breakfast.

I’ve made it with coconut milk before and it turned out great so it should work with soy milk.
