Chicken and Asparagus Crescent Pockets

These Chicken and Asparagus Crescent Pockets are filled with some of my favorite spring flavors and are perfect for entertaining. Filled with fresh veggies and plenty of cheese, these are always a hit.

Springtime is all about getting together with family and enjoying fresh food. With Easter just around the corner, we always make a point of planning an amazing brunch so we can slow down and spend time time together over great food.
We always make sure and find a great Easter egg hunt the day before Easter (or host one ourselves). Some of my best springtime memories are of watching my kids run through the grass in their cute little Easter clothes in search of the best Easter eggs.
To keep things simple, we try and make as much food the day before so that on Easter Sunday we can spend as much time as possible focusing on our family. This year, these Chicken and Asparagus Crescent Pockets will definitely be making their way onto our table. These taste just like spring to me. Packed with fresh asparagus, bell pepper, and green onions, these have so much flavor and are perfect enjoyed fresh from the oven or the next day.
The most important ingredient in these, though, are Pillsbury™ Refrigerated Original Crescent Rolls. These are a must-have anytime we are cooking for a celebration and are amazing when filled with this chicken asparagus filling. We stock up every time we are at Walmart to make sure we have them on hand.
These are super easy to throw together. You could set your kids to work rolling these up if you wanted a way to spend some extra time together. My kids love helping with these. They get so excited when they know these are on the menu because they are some of their favorites.
Chicken and Asparagus Crescent Pocket Ingredients
- Pillsbury™ Refrigerated Original Crescent Rolls, 2 packages
- 1 package of 8 oz. cream cheese
- 4-6 pieces of bacon, cooked and chopped
- 1/2 cup chopped asparagus
- 1/2 bell pepper, chopped
- 1/4 cup green onion, chopped
- 2-3 chicken breasts, shredded
- breadcrumbs
- Melted butter
Chicken and Asparagus Crescent Pockets Instructions
Preheat the oven to 375°.
In a bowl, combine your shredded chicken, cream cheese, chopped bacon, asparagus, bell pepper, and green onion. Salt and pepper to taste.
Mix well and set aside.
Lay a piece of parchment paper on a baking sheet.
Open your Pillsbury™ Refrigerated Original Crescent Rolls and roll them out flat on the parchment paper.
Place one scoop of your chicken mixture on the larger section of each crescent roll.
Break the triangles apart and and roll them up so the dough completely covers the chicken filling.
These don’t have to be perfect. It’s okay if the dough isn’t perfectly sealed. You just want the chicken mixture to be mostly contained.
Fill a bowl with Italian breadcrumbs and another bowl with melted butter. Dip the chicken crescent rolls in the butter first, then roll in the breadcrumbs to coat.
Put into the oven and cook for 9-11 minutes, or until the dough is cooked and toasted brown.
Pull out and top with a small amount of mozzarella cheese, totally optional, but yummy. Pop them back in the oven for about a minute to melt the cheese then pull them back out.
Serve with fresh spring veggies, over rice, or with some Alfredo sauce for dipping.
