Easy Chocolate Tofu Pudding

This chocolate tofu pudding is loaded with protein and tastes like a really decadent treat.
April is National Soyfoods Month and it is a great chance to experiment with some great new ingredients (or rediscover an old favorite). I was so excited when the Soyfoods Association of North America offered to sponsor today’s post so I could share one of our favorite snacks with you.
I make this chocolate tofu pudding for my kids all the time.
They used to *think* they weren’t huge tofu fans but they can’t tell the difference between this pudding and any other pudding recipe.
Now they get excited as soon as they see tofu in our fridge because they know it means pudding time.
I love that I can sneak some extra nutrients into my kids without it being a fight.
Soy is a plant-based protein, which many experts claim is better for your body. I know I personally feel so much better when I eat a high protein diet so I’m always looking for ways to get some extra protein in.
We always stock up on a few packages of House Foods Tofu to have on hand to make this pudding, mix into smoothies, or make homemade salad dressing.
Ingredients
- House Foods Tofu. You can buy any variety. Soft tofu will give you a looser pudding. If you want a thicker pudding go with medium firm.
- 1 package of chocolate pudding mix
- 1/2 cup whole milk or dairy-free alternative
Preparation
Drain your House Foods Tofu and add it to the blender. Add in the 1/2 cup of milk (or dairy-free alternative. Soy milk would be great here).
Blend until you get a nice smooth mixture.
Add in your pudding mix and blend until it is well combined.
You can eat this right away but I like to let it set up in the fridge for a few hours or overnight. The flavor is much better the next day.
My kids all love this and I love having a quick snack to grab during the day.
