Peach Oats Crumble
Peach Oats Crumble has been a big hit at our house forever. When I asked what dessert everyone wanted, this one was usually at the top of the list. It is super easy to make, and great for a family dessert, or for company. If you have leftovers, it is very easy to warm it up in the microwave.
You need to use cling peaches for this recipe. Cling peaches hold up better when they are cooked. The other kinds of peaches may become too mushy.
Ingredients
2 29-ounce cans sliced cling peaches, drained
4 tablespoons lemon juice
1/2 teaspoon cinnamon
2 tablespoons butter or margarine
1/2 cup cooking oil
2/3 cup packed light-brown sugar
2/3 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/3 cups quick cooking rolled oats
1/2 teaspoon vanilla
Preparation
Arrange peaches in a 2-quart baking dish like the Pyrex Bakeware 2-Quart Casserole Dish with Lid. Sprinkle with the lemon juice and cinnamon. Dot the peaches with the butter or margarine by scattering chunks of butter or margarine over the top of the peaches.
Topping
In a mixing bowl, mix oil and brown sugar. Add the remaining ingredients to the mixture. Mix the ingredients by crumbling the topping with you fingers and when mixed together sprinkle the topping over the peaches.
Bake in a moderate 350 degrees over for 45 minutes. Serve warm.

Did you know……..
Don’t throw away the juice when you drain the peaches. Put the juice in a pan on medium heat. Mix a tablespoon of cornstarch and a teaspoon of water together in a small bowl or cup. If the sauce is not sweet enough for you, add sugar to your taste. When the peach sauce starts to boil add the cornstarch and mix slowly. Remove from heat when the sauce starts to thicken. Cool the sauce and serve the sauce over vanilla ice cream.
Adding sweet, ripe peach slices to a spinach and peppery arugula salad really dresses up the salad and tastes delicious. Put the greens in a bowl and add feta cheese, walnuts or pecans roughly chopped, and peach slices. Serve the salad with a vinaigrette dressing.
Put peaches and yogurt in the blenders for a tantalizing peach smoothie that is great for breakfast or a snack.
Peaches are very good in many dessert recipes as well as chicken and pork recipes.
