Puffed Pastry Party Pinwheels
It’s Friday night, you just got home from work, dealing with the commute and picking your kids up from daycare. You look at the clock and realize you have 1 hour to prepare a dish, fix your disheveled hair, change your outfit and then get everyone over to a get-together.
Solution
Bring an easy appetizer that can bake while you get everything else checked off your list. The best thing about this appetizer is you can theoretically pick up everything earlier in the week and then you are ready to assemble once you get home on Friday.
Ingredients
2 frozen puffed pastry sheets (not shells)
8 pieces of deli sliced ham (this can be fresh from deli or packaged)
6 slices of Swiss cheese
Dijon mustard
Directions
Preheat oven to 400 degrees.
Line 2 cookie sheets with aluminum foil or spray with non-stick spray.
Open package of pastry sheets and if you have time, let sheets thaw slightly on your counter. If not, then put in microwave for 25-30 seconds to thaw slightly. Unfold and roll to press the creases together.
Spread Dijon mustard on pastry sheet but leave 2 inches uncovered on one end.
Place 4 pieces of ham at the end with Dijon and then place 3 pieces of Swiss cheese on top.
Carefully grab the edge with the Dijon, ham and cheese and start to roll it up to finish on the end without Dijon. As you will see when rolling, the Dijon does move to cover up that end. Firmly squeeze the roll together to make the end stick and set aside.
Take other pastry sheet and follow instructions again. Take first roll and cut 1/4 inch slices and place on cookie sheet. One roll should cover almost 1 cookie sheet.
Spread Dijon mustard over the top of each pinwheel. Place in oven and bake for 20-25 until puffed and light brown. Remove from oven and place on decorative platter.
These pinwheels are easy, taste wonderful and look very impressive on a nice platter. I hope you were able to use the 20-25 minutes productively and you are now on your way to your get-together.
