This frozen jello salad always disappears so quickly when I make it. My kids love how creamy it is and the soft, marshmallow-like texture is a really fun change from your standard jello salad.

How to Make This St. Patrick’s Day Treat
This rainbow frozen jello salad is so easy to make. It is a variation of the frozen jello salad that my family has made for years, with the addition of some fun St. Patrick’s Day decorations on top.
St. Patrick’s Day Treat INGREDIENTS
- 1 box lime jello
- 1 cup boiling water
- 1 cup sugar
- 1 can evaporated milk
- 6-8 graham crackers
- 2 Tbsp. butter, softened
- Rolo candies
- Rainbow candy bites
Rainbow Frozen Jello Salad Instructions
Start by putting a can of evaporated milk in the freezer for one hour.
While that is freezing make a simple graham cracker crust by crushing your graham crackers, gently mixing in the softened butter, and pressing it into the bottom of a 9×13 pan.

Bring 1 cup of water to a boil and stir in your box of jello.
Add 1 cup of sugar to your jello mixture and stir to dissolve.
Remove your evaporated milk from the freezer and whip it in a stand mixer until it is thickened and begins to form peaks.
Slowly stir your jello mixture into the thickened evaporated milk.

Carefully pour the jello filling onto your graham cracker crust and freeze for about 2 hours.

Once frozen, remove from the freezer and top with your Rolo candies (in the wrapper) and rainbow candy pieces.

Cut into squares and serve.
