Turtle Chip Cookies

I grew up getting Turtle chocolates every holiday season so they are a huge memory food for me. These Turtle Chip Cookies combine all the flavors I love into a bite-sized cookie that is perfect for sharing with friends.
These are so easy to throw together and make a great holiday treat or neighbor gift idea.

Turtle Chip Cookie Ingredients
- 1 ½ C all-purpose flour
- â…“ C unsweetened cocoa powder
- ½ tsp baking soda
- ÂĽ tsp salt
- ½ C sweet cream butter (soft)
- ½ C brown sugar
- ½ C sugar
- 1 large egg (room temp)
- 1 tsp pure vanilla extract
- 1 ½ C caramel bits
- ½ C semi-sweet chocolate chips
- Âľ C pecans (chopped)
Turtle Chip Cookie Instructions
Add the flour, cocoa powder, baking soda, and salt to a large bowl.

Whisk to blend all ingredients.
Set aside.
Combine the butter, brown sugar, and sugar in a large bowl with an electric mixer. Continue to mix for 1-2 minutes.

Add in the egg and pure vanilla extract mixing until all ingredients are fully combined. Slowly add the flour mixture to the wet mixture.
Use a rubber spatula to wipe down the sides and the bottom of the bowl. Cover the cookie dough with plastic wrap.
Transfer to the refrigerator to chill for at least 30 minutes.
Add 1 cup of caramel bits to the batter.
Use your hands to work the bites into the batter.
Return the covered bowl back to the refrigerator.
Keep it in the refrigerator for about 2 more hours.
Preheat the oven to 350 degrees.
Prep the cookie sheet by placing a silicone mat on it.
Using an ice cream scoop measure out about 2 tablespoons of cookie dough. Flatten the cookie dough.
Place the dough slightly apart on the cookie sheet.
Place the cookies in the oven baking at 350 degrees for 5 minutes.
When the cookies have baked for 5 minutes remove them from the oven. Add the mini chocolate chips, caramel bits, and chopped pecans to the top of the semi-baked cookies.
Return the cookie to the oven to bake for an additional 5 minutes.
Remove from the oven.
Leave to cool slightly on the cookie sheet.
Transfer them to a wire rack to cool completely.
