Easter Chick Cookie Pops Recipe (with VIDEO)

After a long winter, I’m so ready to throw open the windows and have some fun in the kitchen. This Easter Chick Cookie Pop recipe is so easy to make and is a great way to get kids involved in the kitchen this spring.
My kids love helping me out in the kitchen, especially when we have a festive holiday treat to make. They never turn down cookies in any form . . . and, well, neither do I.
I don’t often have a lot of time (or patience) to spend baking things from scratch. When you are cooking with 3 kids who are all under 5, baking from scratch just isn’t going to happen. That’s why I love how easy Pillsbury makes it to create some amazing treats with my kids, even when I don’t have hours to spend in the kitchen. We used their cute Ready-to-Bake Chick Cookies to make this baking project super easy.
These Easter Chick Cookie Pops are so easy to make and they look like a cute little chick sitting in a nest of Easter grass! These are perfect for entertaining this spring or to make as a fun treat for (or with) your kids.
Easter Cookie Ingredients
- 1 package of Pillsbury Ready to Bake Chick Cookies – I found these at my local Walmart.
- 1 container of vanilla frosting
- 1/2 cup of melting chocolates
- 1/2 cup shredded coconut
- Green food coloring
- Popsicle sticks
Easter Cookie Instructions
Bake your Pillsbury Ready to Bake Chick Cookies according to the instructions on the package and let them cool completely.
Once cool, frost the backside of one cookie with a small amount of frosting and place a second cookie on the back to make a sandwich.
Place one drop of food coloring in a glass jar and add 1 tsp. of water. Combine your coconut with the food coloring mixture in a plastic bag, seal, then shake to combine.
Heat the melting chocolate until it has a smooth texture.
Roll your cookie sandwich in the melting chocolate until the entire edge of the circle is coated.
Roll the cookie sandwich in the shredded coconut, making sure to create an even layer.
Slide a popsicle stick in between the two cookies of your sandwich.
Lay your cookie pops on parchment paper until the chocolate hardens completely.
