Easy Instant Pot Corned Beef
Corned Beef is a favorite at my house, whether it is enjoyed on Saint Patrick’s Day or any other day of the year. This Easy Instant Pot Corned Beef is so simple to make it and comes out nice and tender every time. Even my picky eaters loved this!
Corned Beef is a St. Patrick’s Day tradition and it is one that my family looks forward to every year. My kids used to be scared of St. Patrick’s Day dinner because I was serving this weird meat that they weren’t quite sure about.
Then I convinced them to try it.
My kids have been hooked ever since. They loved the saltiness of the corned beef and when I like to make it really nice and tender to they love the texture too. When I started making corned beef in the Instant Pot it took this to another level. This Instant Pot corned beef falls apart when it is done and that makes it such a great, kid-friendly meal.
We usually buy a few extra corned beef briskets when they are on sale for St. Patrick’s Day because my kids ask for it for several weeks after St. Patrick’s Day is over. This recipe pairs beautifully with this traditional Irish soda bread.
Easy Corned Beef Ingredients
- 3-4 pound Corned Beef Brisket
- 1 onion, quartered
- 1 tsp. peppercorns
- 1 tsp. yellow mustard seed
- 1/2 tsp. ground ginger
- 1/2 tsp. allspice
- 3-4 cloves garlic
- 2 bay leaves
- 3 cups of water
Easy Instant Pot Corned Beef Instructions
Quarter an onion and place it in the bottom of your Instant Pot. Pour 3 cups of water over the top.
Place the corned beef brisket on top of the rack inside the Instant Pot.
In a separate bowl, combine the peppercorns, yellow mustard seed, ground ginger, allspice, and garlic.
Rub the spice mixture into the top of the brisket and lay the bay leaves on top.
Cook in the Instant Pot for 90 minutes on high pressure.
Do a slow-release then shred the meat.
Serve with cabbage, potatoes, and carrots.
