Peppermint Hot Chocolate Cookie Cups

Holiday baking is pretty much the best part of the season. There’s nothing like making a big plate of treats as a family and sharing them with friends.
We wanted to change things up a bit this year so we came up with these Peppermint Hot Chocolate Cookie Cups. These treats have a little bit of everything and are perfect for a holiday treat plate.
We played around a lot while creating these cookies. We wanted to come up with something that really felt like the holidays to us and nothing feels like Christmas more to me than candy cane hot chocolate.
For the base of these cookies we used the Immaculate Baking Company Organic Vanilla Sugar Cookies from Whole Foods. I love to bake but I don’t have a lot of free time so I’m a big fan of short cuts. We’ve tried a lot of pre-made cookie dough over the years and most are nothing special. We’ve tried some that are so boring that they need to be covered in a thick layer of frosting just to be edible.
The Immaculate Baking Vanilla Sugar Cookies are so good I could eat them by themselves . . . no frosting required. They make the perfect base for any holiday treat.
To make these cookie cups, you’ll need a mini muffin pan. I don’t use mine often but it’s one of those things that is so fun to have when I do use it.
These treats look so impressive when they are done. They are perfect for any holiday party or sharing with friends and neighbors.
Ingredients

- Immaculate Baking Company Organic Vanilla Sugar Cookies from Whole Foods
- Your favorite chocolate pudding (homemade or store-bought)
- Peppermint candy canes
- Marshmallows or whipped cream
- Optional: chocolate sauce
Preparation
Preheat oven to 350°F
Place one Immaculate Baking Vanilla Sugar Cookie round in each muffin cup. Sprinkle with crushed candy canes.
Bake for 12-13 minutes.
These won’t look quite done but they will firm up as they cool.
Use a tart tamper (or the back of a spoon) to push down the center of each cookie to form the cup shape.
Cool for about 20 minutes. You want them cooled completely before you remove them from the muffin tin or they won’t hold their shape.
When completely cooled, remove cookies from muffin tin and fill with chocolate pudding. Top with marshmallows (or whipped cream), more crushed candy cane, and a drizzle of chocolate sauce.
