Potato and Egg Scramble

Hi it’s Ros Emely again from stressfreemommies, and I have a great versatile recipe for you. This delicious potato and egg scramble is perfect for breakfast, brunch and even dinner! It is very easy to make and it’s perfect for us busy moms who are always on the go. We need a fulfilling breakfast in order to take on our mom duties.
Since I am Latina, I incorporated some Latin flavors in this dish such as red onions and red bell peppers. What I love about this potato and egg scramble is that you can basically add your favorite ingredients to it. You can add chicken, cheese, any vegetable and call it your own scramble masterpiece. You know what I like to do? I love to add hot sauce and avocado on top of my scramble, oh talk about deliciousness in your mouth!
My hubby loves everytime I make this for him because it’s hearty and fulfilling. My kids also love this scramble because it’s different from their almost everyday pancakes and eggs breakfast (oops). Sometimes changing up your breakfast or dinner routine can be a good thing, nobody likes to eat the same food everyday, you know?

- -2 medium potatoes, peeled and chopped into small cubes
- - ⅓ chopped red onions
- - ⅓ chopped red bell pepper
- - season with paprika.garlic powder,ground pepper, salt
- - 4 eggs
- In a skillet add 1½ tablespoons of cooking oil, add the potatoes, and seasonings and cook on medium low heat for about 3 minutes.
- Add 1 tablespoon of butter to the potatoes and mix well. Cook for about 15 to 20 minutes on medium low heat and add the onions and bell pepper in between.
- Last step is to add the 4 whole eggs and scramble it with the potatoes.
- You are ready to serve!
